Ingredients
1Egg
1-2tbspSugaror monkfruit sweetener
pinchofSalt
1/2cupKefir
1/3cupFlour
1/2tspBaking Powder
1/3tspBaking Soda
Instructions
Whisk up kefir with the eggs until well combined. Optional: warm up kefir for about 20-30 seconds in the microwave beforehand.
Add the rest of the ingredients and mix just until combined, leaving some lumps. Do NOT over mix!
Preheat a non-stick pan over low to medium heat. Spray with a non-stick spray or add a little bit of butter.
Spoon out the batter, forming small pancakes. Cook for 2-3 minutes per side, or until golden in color and cooked through. Pancakes are ready to be flipped, when you see a lot of little bubbles on the surface. Lower the heat if pancakes are browning too quickly.
Serve warm with your favorite toppings or let cool completely and freeze for a future use.
