Fluffy Kefir Pancakes

Fluffy Kefir Pancakes are soft, sweet and delicious! This recipes yields 2-3 servings. Double the recipe if you like.

Ingredients

  • 1 Egg
  • 1-2 tbsp Sugar or monkfruit sweetener
  • pinch of Salt
  • 1/2 cup Kefir
  • 1/3 cup Flour
  • 1/2 tsp Baking Powder
  • 1/3 tsp Baking Soda

Instructions

  • Whisk up kefir with the eggs until well combined. Optional: warm up kefir for about 20-30 seconds in the microwave beforehand.
  • Add the rest of the ingredients and mix just until combined, leaving some lumps. Do NOT over mix!
  • Preheat a non-stick pan over low to medium heat. Spray with a non-stick spray or add a little bit of butter.
  • Spoon out the batter, forming small pancakes. Cook for 2-3 minutes per side, or until golden in color and cooked through. Pancakes are ready to be flipped, when you see a lot of little bubbles on the surface. Lower the heat if pancakes are browning too quickly.
  • Serve warm with your favorite toppings or let cool completely and freeze for a future use.
