Lviv Syrnik - Chocolate Glazed Cheesecake

Traditional Ukrainian cheesecake, made out of farmer's cheese and covered with a thin layer of chocolate glaze. Enjoy with a cup of fresh coffee or hot tea.

Ingredients

  • 600 g Farmer's Cheese (Tvorog) *see blog post
  • 90 g Butter soft
  • 100 g Sugar
  • 15 g Corn Starch
  • 4 Eggs
  • 30 g Sour Cream full fat
  • 60 g Raisins dark
  • 1 tbsp Flour to coat raisins
  • 1/2 Lemon or Orange zest only
  • 1 tsp Vanilla Extract

Chocolate Glaze

  • 75 g Chocolate dark or milk, good quality
  • 45 g Butter

Instructions

  • Preheat your oven to 350 F. Grease a loaf pan with butter and line the bottom with parchment paper.
  • Soak raisins in hot water, rum or orange juice for 10-15 minutes. Drain the liquid and dry raisins with a paper towel. Coat in flour.
  • Press farmer's cheese through a mesh strainer or blend with a hand blender. Add sugar, corn starch and lemon zest. Gently mix.
  • Add in the soft butter and combine. Add the eggs, one at a time. Mix well between each addition. And finally, add sour cream, vanilla and raisins. Mix just until combined.
  • Bake at 350 F for 40-50 minutes. Let come to room temperature inside the turned off oven. Transfer to the fridge for 1-2 hours. Take out of the loaf pan and flip upside down on a serving tray.
  • For the glaze, melt chocolate with butter until smooth. Let cool to room temperature. Spread evenly over the cheesecake.
  • Optional: let fully set in the fridge for at least 4 hours. Enjoy!
