This recipe for Healthy Spinach Pancakes is super easy. Just blend everything with a blender, and cook in a non-stick pan with a drop of oil. I like to make them into mini-pancakes for a fun and delicious breakfast.

Why Spinach Pancakes

There’s so many articles out there on how important it is to include spinach into your diet. Here’s one of them.

But to summarize, spinach contains lots of vitamins and minerals, including magnesium, potassium, iron, calcium, folic acid, Vitamins B6, C, and K. It is also believed to be good for blood pressure, eye health, and so much more.

I personally really like adding spinach into my salads and smoothies. Sometimes I even add a handful into my soup or pasta dish. But let’s be honest, spinach is rarely a part of our breakfast.

Getting greens into our toddler’s diet can be even more challenging. However, these healthy spinach pancakes make it easy! Naturally sweet (from bananas) and bright green in color (thanks to spinach), these pancakes make a fun and nutritious breakfast for kids of all ages, even babies. And I actually enjoy them myself too.

Only 6 Ingredients

This is an easy Blender Recipe, that requires a total of only 6 ingredients. Healthy and delicious breakfast doesn’t have to be hard to make, or take hours of preparations.

Banana

We’re using a ripe banana to sweeten these healthy pancakes. No sugar needed.

Egg

Works as a binding agent. Adds protein.

Spinach

A great way to sneak in extra greens into your diet. Adds fun color – kids will love it!

Baking Powder

Makes these spinach pancakes light and fluffy. But you can totally skip this ingredient.

Cinnamon

Just a touch of cinnamon adds a ton of flavor. Feel free to leave it out, if you’re not a huge fan. Or use vanilla extract instead.

a pinch of Salt

I always add a pinch of salt to all my sweet dishes. It helps to balance out the rest of the flavors.

Oats or Oat Flour

Any type of oats or oat flour works great in this recipe, as we’ll be blending all the ingredients in a blender.

Also, oats can be substituted with almond flour.

Almond Flour (optional)

Almond flour is incredibly nutritious! It also provides a great texture and rich flavor for these pancakes.

If you don’t have any on hand, just use oat flour instead. The texture will be slightly different, but it will still taste great.

Tips for making Healthy Spinach Pancakes

  • Use overripe bananas. This will make your pancakes sweet without using any additional sweeteners.
  • Cook on low heat. Keeping it on low will make sure your spinach pancakes cook through before browning too much on the outside.
  • Use oat flour instead of oats, if don’t have a blender. Then just mash your banana with a fork, and combine with the rest of the ingredients, using a regular whisk or silicone spatula.
  • Don’t add too much spinach, or else your pancakes will turn out soggy.

Just like with any pancakes, maple syrup or honey can be a great topping.

  • fried bananas

Simply slice up your banana, and fry in a non-stick pan until golden in color. Bananas will get even sweeter and extra fragrant.

  • peanut butter sauce

To make an easy peanut butter sauce, combine peanut butter powder and a little bit of hot water or milk. Or use regular peanut butter instead.

Great healthy topping for kiddos. Also, add a pinch of cinnamon on top.

Storing Pancakes

This is a freezer-friendly recipe, meaning you can easily freeze ready pancakes for up to a couple of months. Just make sure to use a good quality airtight container or ziplock bag to avoid freezer burns.

You could also store these in the fridge for a few days. Simply reheat in a pan or microwave before serving. Don’t forget all the fun toppings!

Ingredients

  • 1/2 Banana large, very ripe
  • 1 Egg large
  • handful Spinach fresh or frozen
  • 1/4 tsp Baking Powder
  • 1/2 tsp Cinnamon or vanilla extract
  • 1/4 cup Oats or oat flour
  • 1/4 cup Almond Flour or oats/oat flour
  • pinch of Salt

Instructions

  • Blend all ingredients in a blender until smooth.
  • Warm a non-stick pan over medium heat. Add a drop of oil (I'm using coconut oil) and lower the heat.
  • Cook pancakes on low for 3-4 minutes per side, or until fully cooked.
  • Serve warm with your favorite toppings and enjoy!
